But, for a richer experience try our recipe below.

Market Pancakes:

  1. Two cups of our Market Pancake Mix
  2. 2-eggs separated
  3. 1/2 cup of melted butter
  4. 1 cup of butter milk or whole milk
  5. 1 tbsp lemon or orange peel (optional)

Separate yolks and egg whites. Set aside yolks and in a small bowl whip egg whites until frothy and bit stiff. In a separate mixing bowl, add pancake mix, cooled melted butter, butter milk and egg yolks. Blend together with a spoon or mixing paddle. Do not over mix. Lightly fold in egg white and lemon peel.

Ladle 1/4 cup of batter on a hot buttered griddle. While batter bubbles you can add blueberries or chocolate chips. Once all bubbles pop - it's ready to flip. Brown quickly on the other side. Serve with hot buttered Canadian Maple Syrup.

Crepes:

  1. 1 cup of Market Pancake Mix
  2. 1 egg
  3. 1 cup of whole milk plus more if needed.

In a mixing bowl, add Pancake Mix, egg and whole milk. Use a whisk to blend...the texture should be like heavy cream. If it looks too thick, add more milk.  Laddle 1/4 cup in a small non-stick skillet. Tilt the pan to cover the bottom. When the edges began to crisp, flip the crepe for a minute on the other side. Serve with fruit and cream.
