A taste of New Mexico. So easy just follow the recipe.
Ingredients:
1 package of Suárez Market Sopapilla Mix
2 tbsp. shortening or lard
¾ cups hot water
2 cups vegetable oil
To Dust & Drizzle
¼ cup confectioners sugar
1 tsp. ground cinnamon
4 tbsp. honey
Directions: In a large mixing bowl, add sopapilla mix and shortening. Use your hands to incorporate the shortening into the mix. Add hot water a little at a time and mix with your hands until dough is formed. Knead for 5-minutes. Place the dough in a plastic bag to rest. Cover with a towel. Rest the dough for 20-minutes. In a dutch oven, heat oil to 350˚. Once rested, divide dough into four pieces. Roll each piece into rectangles 1/4" thick. Cut into smaller squares. Once the oil reaches temperature, carefully add small squares into the oil. No more than three at a time. Cook to golden brown on both sides, flipping them with a fork or slotted spoon. The cooking time is approximately 4-minutes. Remove and place on a paper towel-lined cookie sheet. Dust with cinnamon powder sugar. Keep warm in an oven set on low. Serve with a drizzle of honey.
