EMPANADAS SAVORY

Growing up in Pueblo Lisa Suarez remembers empanadas coming in and out of her mom's kitchen. They were mainly New Mexico style with pumpkin or fruit fillings. When she lived in Guadalajara the empanadas were also savory.  These are her favorites... flakey hand pies packed with savory fillings finished with whatever crimping style that peaks her fancy at the time.  Minimum 6 empanadas. They freeze great! Mix and Match!

• Red Chile Piccadillo (beef, peppers, onions and market red chile-cheese sauce)
• Green Chile (chicken, potato and market green chile-cheese sauce)
• Calabacita-Queso (zucchini, corn, red pepper, onion and QuesoOaxaca sauce)
